Millets are coarse grains or cereals or small-seeded grass. These millet are called Nutri cereals or superfoods. The history of Millet dates previous 5000 to 6000 years ago. When it comes to grains, only two grains immediately come to mind, namely wheat and paddy rice. We need to know that when a large population needed food, the first Green Revolution began, and wheat & Rice was produced in large quantities, also different varieties were introduced and the country's hunger was satisfied. But as a result, our healthy staple cereals were quickly sidelined due to the Green Revolution. Also, these grains replaced the food of the poor people living in hilly areas with wheat chapattis, rice, flour, biscuits, and cake and later the vicious cycle of health problems began. At that time for Government, administration & scientists feeding a large population was important and a priority, so we followed. Millets are nutri-cereals that have excellent nutrient content containing proteins, vitamins, essential fatty acids, dietary fibers, and minerals such as zinc, iron, potassium, calcium, and magnesium. They help in managing health benefits like blood pressure management, regulation of blood sugar level, thyroid, cardiovascular and celiac disease. Millets are the cereals of the grass family Poaceae. They are small-seeded grasses, many of them adapted to tropical and arid climates, and they are characterized according to their ability to thrive in less fertile soil.
We have drought conditions & less availability of agricultural water & this cereal crop can grow anywhere, even with limited water or less rainwater with no fertilizers, pesticides, or chemicals, so these are considered eco-friendly agriculture. It is a gut-friendly food which is the most talked about food right now. We can easily avoid these lifestyle diseases by including millets in our diet. Now that we know, let us return to the food which we use to consume 50 years ago and become healthy & strong like before & create a better ecosystem.
Wheat Rice and Millets contain starch, fats, and some protein beans, but Millets are high in fibers, which are only 1.2% in wheat and 0.2% in rice/paddy. Millets contain vitamins, minerals, and phytochemicals in huge quantities compared to wheat and rice. The fibers and starch in millets have a special feature that slowly releases sugar into the blood when millets are eaten. It means that blood sugar does not uprise and health is promoted. On the contrary, the consumption of wheat and rice causes blood sugar to uprise and there are cognitive health problems, modern medical science calls it a genetic disorder. All this can be avoided simply by reverting to the Millets food culture. Also, since millets are gluten-free food, it strengthens the pancreas, cleanses the pancreas, and is considered insurance for the liver and kidneys.
Millets can be made into flour, poha, bread, chapati, khichdi, pulao, biryani, dosa, biscuit, etc. Just one thing to be careful of while buying millets, they should be in their natural color.
First of all, wash it with clean water 2 to 3 times. Then soak them in water for at least 6 to 8 hours. If you consume millet immediately then you can use the same water. If you wish to store it then you can dry it under fan/sun & store it in an airtight container.

Grind the millets fine in a mixer jar or you can also get the millets grinded from your nearby Flour Mill (Chakki) . Store the flour in airtight container & refrigerate. They stay fresh & well for atleast 3-4 months
